Distillation

Distillation is the process of separation of a liquid mixture into its constituent parts, in which differences in boiling points are used. During distillation, the mixture of water and alcohol is heated to the boiling point and partially evaporated, the steam is separated from the liquid and condenses. The main elements of fermented mash – water and alcohol, have different boiling points (different volatility): The boiling point of ethanol is 78.38°C, and that of water – 100°C. Distillation aims to separate volatile, i.e. fast-boiling – water, ethanol, methanol, ethyl acetate, acetic acid, higher alcohols, acetalaldehyde, esters, etc., from non-volatile elements – solid or dissolved parts of the fruit, salts, acids.

In 2017. "VINPROM – TROYAN" AD invested in the purchase of a new distillation column, made by the Bulgarian company "Benkovski & Co" especially for our company. The height of the installation is 16 m.

The column is almost entirely made of copper. The column is equipped with automatic sensors and regulators, thanks to which the master distillers precisely control the various parameters during distillation – the amount of fermented mash supplied, the alcohol content of the distillate, the temperature of the distillate, etc.

Distillation column operates in continuous mode.

The production of alcohol is strictly monitored by customs, therefore, after leaking from the column, the distillate passes through a flow meter sealed by customs, which accurately reads the liters produced and their alcohol content. The distillates are then pumped into storage tanks.
